On the lighter side, I have been doing a lot of meat processing and animal related products. So, I went to my favorite butcher store (Left Bank Butchery in Saxapahaw) to get some awesome meats.
I still made time for making a five pound batch of pasture raised pork. This batch is called Jagerwurst, and is amazingly delicious! It is made with mustard seed and nutmeg. This will be the first batch of sausage that will be run through the smoker. I don’t think I did a bad job stuffing it.
Charcuterie rocks!
