Dream Butchering Board

So, even though I am no longer raising rabbits right now, I still intend on butchering the ones that I buy at livestock auction. I just got a new Dutch oven (YAY present for myself), and really love the low cost animals with no waste. So far, I have been doing the butchering over the bathtub, with a catch basin to get the offal.

I am sick of scrubbing out the bathtub, and have no location to clean the skin, and can’t remove the bin. So I want to design a butcher block (on wheels) to have on the back porch, and do a bulk of the butchering and cleaning outdoors.

So, I was searching the internet for what I wanted, and I found this fold-able potting table that I want to use as my fold-able base. Thanks to Lady Goats for providing the idea.

I really love how the table can fold down into a really small space, and has a removable bin on the top for catching blood and holding offal. Next to the bin, however, I wanted to have a more reinforced cutting board, so I want to add a removable cutting block next to the sink area to facilitate easy cleaning. I was poking around on the Lumberjocks forum, and found this Butchers Block made out of recycled pallets.

I also want wheels involved, so hopefully, I can calculate these in. I also want to have a rabbit and chicken wringer available on the side. I think I might try to make my own. This station doesn’t deal with fleshing, or carcass hanging for skinning. I am not sure what I will do with that quite yet.

Does anyone have any suggestions or ideas for this dream butcher block? Or does anyone have something else that works for them that I am missing?
